Southland Academy students in 2nd through 5th grades mixed vinegar with hot milk causing a reaction that separated the milk into curds and whey. The vinegar made the milk more acidic which caused the protein, casein, to unfold and reorganize. Once separated, the curds were collected and the excess whey was removed.  Students added food coloring to the curds.  After hardening, the curds made fun, colorful, plastic toys.
